La Poule au Pot, French cuisine bourgeoise

As the third owners - since June 2018 - of La Poule au Pot, a Parisian institution that has been open for 90 years, Élodie and Jean-François Piège have crafted a menu rooted in France’s culinary heritage through the generosity of cuisine bourgeoise - emblematic of French savoir-vivre from the 19th century through the 1950s - which shines through in these dishes. A convivial spirit that is reflected in the venue, which has been refreshed but left, much like one of the characteristics of its dishes, “in its original state”, typical of the 1930s.
